Here is a confession about the Love Inc. gang: WE LOVE FOOD.
So when something like “Popcorn Lover’s Day” pops-up (sorry) on our diary, there is no hesitation about what that day will be like at the Love Inc. HQ. T0 celebrate in style, Caro went to seek advice from her friend – digital content guru & kickarse creative – Kate Sims.
All the way from Apple Valley, Minnesota, to Tunbridge Wells, Kent (that’s us!), Kate shares the team’s passion for all things tasty, and is known by her friends for her original and incredible dishes, focusing on both taste and wellness.

Back to popcorn: introducing Kate’s super-easy, super-tasty take on an international favourite, a healthy snack you’ll whip up in no time & will love to experiment with time after time!
To make a generous sharing bowl, you will need:
- 1 tablespoon Coconut Oil
- Popping corn
- Salt (sea salt flakes work a treat!)
- Large saucepan & lid
- Tupperware-style container (optional)
Here, Kate divided the popped corn into three smaller bowls, to give me a taste of the endless seasoning possibilities this simple ingredient offers. She chose the following:
- Smoked Paprika & Grated Parmesan (my absolute favourite)
- Yeast Flakes (surprisingly tasted like cheese!)
- Wakame Seaweed Flakes
Melt the coconut oil in a large saucepan on medium to high heat. Once the oil is nice and hot, cover the bottom of the saucepan with a layer of popping corn and cover with the lid.
The corn will start popping after a minute or so, quickly filling up the pan. Whilst the corn is popping, mix your ingredients of choice together, ready to flavour.
Leave it until the popping sound spaces out, then take it off the heat. Poor the pop-corn in a Tupperware and add your seasoning of choice, secure the lid and shake until thoroughly coated. Alternatively, poor the popped corn in a salad bowl and stir in the seasoning. If you choose to experiment with several flavours, divide the popped corn into portions (one per flavour), and use a piece of kitchen roll to wipe the Tupperware clean, after each mix.
Adjust the seasoning to taste, and serve – voilà!
